Cod fillet with herbs

White cod fillet with grilled butter is a really classic Swedish combination. Scandinavian elegance and simplicity come together in this authentic keto dish, which you can prepare in no time at home.

Preparation time: 10 + 15 minutes

Servings: 4

Carbohydrates in 1 serving: 0.7 g net carbohydrates

Necessary products:

  • 650 g boneless cod fillet, boneless
  • 1 tsp salt
  • 140 g of ghee
  • Salt and pepper to taste
  • Herbs to your taste

For garnish:

  • Zucchini noodles
  • Spinach

Method of preparation:

  1. Add salt to the pieces of white fish and leave in the refrigerator for an hour.

If you do not have that much time, you can fry the fish immediately after salting.

2. Dry the cod fillet with a paper towel. Heat 1/3 of the Ghee butter and fry the fish over medium heat for 3-4 minutes on each side. Drizzle the fish with the oil in the pan from time to time.

3. Towards the end of cooking, reduce the heat. Season with freshly ground black pepper and herbs to taste. Remove the cod fillet from the pan.

4. Melt the remaining ghee in a pan over medium heat and continue to heat until it acquires a nutty aroma and a light brown color.

5. Place the fish on zucchini noodles, pour over the baked butter and garnish with spinach if desired.

White fish covered with parsley crust and butter, served on zucchini noodles and roasted macadamia nuts. Doesn’t it sound like a dish you would find on the menu of a fine restaurant?

We will show you how you can prepare it at home in just 20 minutes, using low-carbohydrate products.

Nutritional composition in 1 serving: 2 g net carbohydrates, 56 g fat, 45 g protein and 695 calories

Necessary products:

  • 55 g of butter Ghee + another 1 tbsp for frying
  • 28 g of macadamia nuts
  • 2 tablespoons chopped fresh parsley
  • 6 tablespoons grated Parmesan cheese
  • 400 g white fish fillet (cod, flounder or other)
  • 100 g zucchini, grated in a spiral
  • Salt and pepper to taste

Method of preparation:

  1. Melt the ghee in a saucepan over medium heat and cook until lightly browned, being careful not to burn.
  2. Meanwhile, roast the macadamia nuts in a dry pan for 2-3 minutes until golden. Remove from the pan and crush with a mortar or chop finely with a knife. Set aside.
  3. To prepare the breadcrumbs for the crispy crust, mix the chopped fresh parsley with half of the grated Parmesan in a plate.
  4. Season the white fish fillet with salt and pepper to taste. Then roll it on all sides in the breadcrumbs. Make sure the fish is completely covered with the mixture.
  5. Heat 1 tbsp ghee in the same pan in which you roasted the macadamia nuts. Once hot, fry the fish. Cook for about 2 minutes on each side (time depends on the size and thickness of the fillet). After frying the fish on one side, add about 1/3 of the baked butter in the pan and season the fish with it.
  6. Remove the fillet from the pan and leave in a plate on warm.
  7. Add the zucchini spirals to the same pan, season with salt and a little more butter. Turn off the stove after 30-40 seconds.
  8. Divide the zucchini noodles into 2 plates and sprinkle with crushed macadamia nuts. Place the fish on top, garnish with the remaining baked butter and grated Parmesan cheese.
  9. Serve and enjoy.
