A simple recipe, but with a few added accents for super taste – meatballs with yellow cheese, wrapped in strips of bacon. Crispy on the outside, tender and yellow on the inside, these meatballs are suitable for a low-carb lunch or dinner, with a garnish of your choice.

Recipe for meatballs with yellow cheese wrapped in bacon

Preparation time: 55 minutes

Necessary products:

  • 600 g minced meat of your choice (for juiciness use mixed)
  • 2 tablespoons onion powder (or green onions)
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 egg
  • 16 strips of bacon (about 200 g)
  • 100 g of yellow cheese

Execution of the recipe:

  1. Preheat the oven to 175 ° C. Prepare a tray with a sheet of baking paper.
  2. In a bowl, mix the minced meat, onion and garlic, salt and pepper, together with the egg. Mix very well.
  3. Divide the resulting mixture into 8 equal portions.
  4. Cut the yellow cheese into 8 cubes and wrap each portion of minced meat around a cube of yellow cheese, pressing well to seal it.
  5. Form tight meatballs and wrap 2 pieces of bacon, across each other, around them.
  6. Place the meatballs with the open end of the bacon strips facing down on the pan.
  7. Bake for 30-40 minutes or until the bacon has a nice, golden brown color.

You can use a metal grid to place in the pan and arrange the meatballs on it so that the fat from the meat can drain out during baking.

Culinary tips for your yellow meatballs

  • Instead of yellow cheese, you can also use grated mozzarella or cheddar cheese.
  • Add your favorite dried spices to the minced meat – such as savory, mint, parsley.
