Keto waffles with berries and vanilla cream

We present you a recipe for keto dessert – waffles with cinnamon flavor, served with vanilla cream and blueberries.

Preparation time: 30 minutes

Servings: 4 large waffles

Nutritional composition in 1 waffle: 3 g net carbohydrates, 22 g protein, 19 g fat and 297 calories

Necessary products:

For the vanilla cream:

  • 4 tablespoons soft cream cheese
  • 1 tsp vanilla extract
  • ½ teaspoon nutmeg powder
  • 1 tsp stevia powder, finely ground

For waffles:

  • 4 eggs
  • 220 g grated mozzarella cheese
  • 1 tbsp coconut flour
  • 1 tsp cinnamon powder
  • Coconut oil for lubrication
  • Fresh berries for serving (blueberries, raspberries or others)

Method of preparation:

Vanilla cream:

  1. In a bowl, mix the soft cream cheese, vanilla extract and nutmeg.
  2. Stir until smooth and refrigerate while preparing the waffles.

Waffles:

  1. Turn on the waffle iron to warm up.
  2. Beat the eggs in a bowl, add the grated mozzarella cheese, coconut flour and cinnamon powder. Stir until smooth and set aside for 5 minutes to allow the coconut flour to absorb the liquids.
  3. Grease the waffle iron with coconut oil and distribute the mixture evenly. Close and bake for about 6 minutes or as directed by your waffle iron.
  4. Carefully lift the lid when you think the waffles are ready.
  5. Serve warm keto waffles with vanilla cream and berries of your choice.

From the waffle mixture you can prepare 4 large or 6 small, depending on the size of the waffle iron.

Keto waffles with blueberry oil

Keto waffles with a satisfactorily crispy crust, served with fragrant blueberry oil. The perfect low-carb dessert that you can serve even for breakfast if your health requires you not to miss it.

Replace cow’s butter with coconut oil to make them dairy-free. Naturally, they do not contain gluten, as we use coconut flour instead of white.

Preparation time: 15 minutes

Servings Per Container: 4

Nutritional composition in 1 waffle: 3 g net carbohydrates, 57 g fat, 15 g protein and 585 calories

Necessary products:

  • 8 eggs
  • 140 g of melted ghee
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 30 g coconut flour

For blueberry oil:

  • 85 g of ghee butter
  • 30 g of fresh blueberries

Method of preparation:

  1. Beat the eggs in a bowl and pour in the melted ghee.
  2. Add the vanilla extract, baking powder and coconut flour.
  3. Beat until smooth using an electric mixer. Set aside for 5 minutes until the waffle iron is warm.
  4. Then pour the dough into the waffle iron and bake until golden. Baking time depends on the size and instructions of the appliance. Repeat with the remaining dough until all the waffles are baked.
  5. In a bowl, mix the ghee butter with the fresh blueberries and beat with an electric mixer until smooth.
  6. Serve the waffles smeared with blueberry oil.

Advices:

  • Don’t have time to beat the blueberry oil? Then just serve the waffles with butter and cinnamon or with sour cream and berries.
  • If the waffles taste more egg-shaped, leave them to cool, cool and then heat in a pan, toaster or oven.
