Keto meatballs in Chirpan style + meatballs in tomato sauce

The recipes we know from childhood are our favorites – like Chirpan meatballs. It is not known what is the reason for their name being associated with the town of Chirpan, but the recipe is appetizing and emblematic of our latitudes.

So we decided to prepare a low-carbohydrate version of it and enjoy our favorite meatballs in Chirpan without harming our keto regime. And because the recipes are very close – we included steps for meatballs in tomato sauce. See how to prepare both dishes in the following lines:

Keto version of chirpan meatballs

The town of Chirpan is known mainly for two things: as the birthplace of the poet and revolutionary Peyo Yavorov, and with the classic recipe for Chirpan meatballs. Now let’s create some poetry in the kitchen by preparing juicy and fragrant meatballs in Chirpan style:

To prepare them you will need:

  • 500 g of minced meat
  • 1 bunch fresh onions
  • 1 egg
  • 1 tsp savory
  • Salt and pepper to taste

About the breading:

  • 3 tbsp parmesan
  • 1 tbsp husk
  • 1 tbsp almond flour

The sauce for your meatballs in Chirpan style:

  • 1 head of broccoli
  • 1 bunch fresh onions
  • 50 g celery, stems
  • 2 pcs. peppers of your choice
  • 2 tomatoes
  • 3 tablespoons extra virgin olive oil
  • 1 tsp savory
  • 1 tbsp red pepper
  • Salt to taste

Preparation of keto meatballs in Chirpan style:

  1. Put about 1.5 liters of water on the stove in a saucepan and let it boil.
  2. In a bowl, mix the meatball ingredients. Divide them into 13 equal parts and form into balls. Mix the ingredients for the breading in a plate and roll each meatball in it well. Put them in boiling water.
  3. Add a little more fat to the pan if there is not enough left. Put finely chopped peppers, celery, onions. Stir for about 5 minutes until soft. Grate both tomatoes and add the broccoli roses. Add red pepper and salt to taste. When the broccoli softens, pour the mixture over the meatballs.
  4. Simmer, stirring for 2-3 minutes. Serve with sprinkled with savory and freshly chopped parsley. If you have parmesan left – sprinkle each portion with it.

Bonus: Meatballs in tomato sauce with the products for meatballs in Chirpan style

For this recipe we use exactly the same products from the meatballs in Chirpan style. The preparation is a little different:

  1. Fry the shaped meatballs in a pan. When sealed on both sides, remove with a slotted spoon and leave on kitchen paper to absorb the fat.
  2. For the sauce – it is prepared in the same way as for the Chirpan meatballs. When the broccoli softens, add the semi-finished meatballs to the sauce and simmer for another 10-15 minutes.
