Keto chocolate cake: gluten free and sugar free

If the dessert does not contain gluten or sugar, it does not mean that it can not be tasty. Today we decided to prove it to you with a unique chocolate cake in the form of a cake with a delicious coffee icing. Of course, our dessert is completely healthy and keto. We were inspired by our passion for sweet temptations, which, however, are useful and prepared with natural products.

Our chocolate cake recipe resembles those used in the 19th century. It’s time to move on:

Necessary products for the marshes of our keto cake:

  • 1 tsp almond flour
  • 2/3 tsp cocoa powder
  • ¾ h. Coconut flour
  • ¼ tsp flaxseed flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3-4 tablespoons coconut oil
  • 3 tablespoons steviola powder
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond milk
  • 1/3 tsp strong black coffee

Necessary cream products:

  • 2 sachets of cream cheese
  • 3-4 tablespoons coconut oil
  • 3 tablespoons steviola powder
  • ½ h. Coconut flour
  • ½ tsp cocoa powder
  • ¼ tsp ground coffee powder
  • ¾ h. Cooking cream
  • pinch of salt

How to prepare our keto cake:

  • Preheat the oven to 220 degrees and prepare 2 medium-sized pans. Cover their bottoms with baking paper and grease with coconut oil.
  • In a large bowl, combine the almond flour, cocoa, coconut and flax flour, baking powder, baking soda and salt. Stir well.
  • In another bowl, mix the coconut oil with the steviola powder and beat with a mixer. Add the eggs in sequence, beating the mixture after each one.
  • Add the vanilla and beat again. Once we have added flavor to the mixture, you need to combine the mixed dry ingredients with it. Stir again with a mixer.
  • Finally add the almond milk and coffee.
  • Spread the resulting mixture in pre-greased pans and place in the oven until baked for about 30 minutes. You can check if the countertops are baked with a toothpick. If there are no traces of the mixture on it, then the marshmallow is baked enough. It needs to cool to get a firm cake.
  • Meanwhile, prepare the cream. In a large mixing bowl, combine the cream cheese and remaining butter. Mix with a mixer. Add the cocoa, steviola, coconut flour, coffee and salt. Beat again with a mixer, making sure there are no lumps left. Only then add cream and mix finally.
  • Once the trays are ready and completely cooled, place the first tray on a serving platter. Cover with half of the glaze evenly. Add the second layer, and then you need to cover it with the remaining glaze. Refrigerate until serving.

How does the cake recipe come about?

Today we are witnessing tens of thousands of recipes for making cake. It can be with or without marshmallows, with cream, with chocolate, only with fruit or with icing and what not. But you’ve wondered where the cake came from and what its history is.

Various sources indicate that the Egyptians were the first to acquire the ability to bake their food. In the English dictionary, the word “cake” first appeared in the 13th century. And only in the Middle Ages began the mass making of cakes and ginger bread. They were quite different from now on and lasted for several months. They resembled a cake covered with dried fruit.

It was only in the 17th century that cakes, known to us to this day, appeared. They were prepared in an oval shape, necessarily with glaze. Its ingredients were proteins, flavors and sugar. The icing was poured on the already baked cake and returned to the oven to be well sugared. Then it had to be cooled quickly to get a glossy finish.

It was not until the end of the 19th and the beginning of the 20th century that the glaze was replaced by the well-known butter cream. To this day, we use it as a solder on baked loaves and often as a cake coating.
