Garash cake has been known to many of us since our childhood, and is still a favorite of others. Crispy walnuts combined with irresistibly sweet and delicious chocolate – definitely this taste is hard to forget. This is exactly what inspired us to prepare two keto versions of our favorite Garash cake, so that we can enjoy it even when we are on a keto diet.

Recipes for homemade cake Garash in keto style

We present you two non-traditional recipes for homemade Garash cake in keto style. Not much is known about the original recipe, but each version of the dessert is delicious enough and very chocolatey.

Necessary products:

  • 9 eggs
  • 230 g of butter
  • 9 tablespoons cocoa powder
  • 300 g of raw walnuts
  • 150 g of steviol powder
  • 60-120 g cooking cream
  • Coconut oil for lubrication

For decorating:

  • Coconut shavings
  • Sliced almonds
  • Forest fruits

Method of preparation:

Step 1: Preparation

  1. Preheat oven to 180 degrees.
  2. Spread coconut oil on a cake tin measuring 20 cm in diameter. Cover with baking paper and grease it as well.

Step 2: Blats

  1. Place the walnuts and steviola powder in a food processor and pulse until fine crumbs are obtained.
  2. Beat the egg whites with a mixer until soft peaks.
  3. Pour the walnut mixture over the egg whites and mix with a spatula in a circular motion.
  4. Divide the resulting dough into 4 equal parts. Bake each loaf for about 12-15 minutes in an oven preheated to 180 degrees.
  5. Carefully remove the marshmallows from the cake tin and separate the baking paper.
  6. Repeat with the rest of the dough until all the loaves are baked.
  7. Set aside the baked loaves to cool to room temperature.

Step 3: The chocolate ganache

  1. Melt the butter in a pan over low heat. Add the cocoa powder and stir to mix well.
  2. Beat the yolks and 1/3 of the steviol powder with a mixer for 3-5 minutes until a thick foam is obtained.
  3. Continue beating the mixture on low speed and add the melted butter with cocoa. Then pour the cooking cream and continue beating.
  4. Set aside the chocolate ganache to cool completely.

Step 4: Assemble the cake

  1. Place a tray on a cake stand or in a plate.
  2. Spread about a cup of ganache on it, place the second tray on top and cover again with ganache.
  3. Repeat with all the tops, and finally you should finish covering the cake with the chocolate ganache.
  4. Put Garash cake in the refrigerator uncovered for at least 1 hour to harden or leave overnight.

Step 5: Decorating

Decorate the top of the Garash cake with crushed walnuts, almonds, green colored coconut shavings or berries.

Homemade Garash cake with one loaf

A different recipe for Garash cake. Not like the traditional one with several marshes, but with only one, but tasty and chocolate enough. And this recipe is prepared with specially selected low-carb products so that we can enjoy dessert even when we are in keto mode.

Necessary products:

  • 6 eggs
  • 230 g of butter at room temperature, soft
  • 150 g of steviol powder
  • 2 cups walnuts, finely chopped
  • 4 tablespoons cocoa powder
  • ½ tsp vanilla extract
  • ½ tsp rum essence, optional

Method of preparation:

Step 1: Preparation

  1. Let the oven preheat to 180 degrees.
  2. Place baking paper on the bottom of a round pan measuring 22-25 cm in diameter.

Step 2: Swamps

  1. Put the walnuts in a food processor or grinder and grind them finely.
  2. Beat the eggs and separate the egg whites from the yolks in two separate bowls. Use only 4 egg whites and all 6 egg yolks.
  3. Using a mixer, beat the egg whites with half of the steviol powder until fluffy. Set aside.
  4. Again with a mixer beat in another bowl the yolks with the remaining steviola powder. Add cocoa, soft butter at room temperature, vanilla essence and rum (optional). Beat the mixture until smooth and set aside 1 cup of it to spread on the cake.
  5. Add the beaten egg whites to the rest of the oil mixture and beat with a mixer. Add the ground walnuts and continue beating.
  6. Pour the marshmallow mixture into the prepared pan and bake in a preheated 180 degree oven for about 25 minutes or until the toothpick stuck in the marshmallow comes out clean.
  7. Allow the baked loaf to cool completely.

Step 3: Chocolate glaze

  1. Using a spatula, spread the icing on the cake.
  2. Decorate with green coconut shavings, sliced almonds, berries (raspberries, strawberries) or anything else to your liking.
  3. Cut and serve or refrigerate for up to 3 days.

History of Garash cake

Garash cake is one of the most famous and delicious traditional Bulgarian cakes. It was prepared for the first time by the Austro-Hungarian confectioner Costa Garas.

Around 1880-1885 the confectioner arrived in the city of Ruse, where he became a tenant and manager of the grand hotel “Islam Hane”. After the Liberation of Bulgaria, many foreigners entered our country – Hungarians, Belgians and others. They bring with them their culinary traditions and customs.

Costa Garas is one of those people who brings part of his culture into our kitchen. It began offering hotel guests pastries and desserts from Australian and Hungarian cuisine.

Prominent guests often came to the hotel, some of whom were even the kings of Romania, Serbia and Sweden. It is for welcoming important guests that the young confectioner invents the famous Garash cake.

What is the original recipe for Garash cake?

Unfortunately, the original recipe for Garash cake cannot be found even in the State Archives – Ruse, where the roots of the dessert come from.

There are many recipes that claim to be original. There is no way to prove this, but despite all this speculation, whether it is original or not, each cake recipe is extremely appetizing and delicious.

The traditional Garash cake recipe is made with eggs, sugar, walnuts, cream and chocolate. Make at least three thin marshmallows and bake separately. The chocolate is tempered and mixed with the cream to make a cream with which to spread the marshmallows. Optionally, rum or cognac essence can be added.

The thin sheets are arranged on top of each other and each of them is smeared with chocolate cream. Finally, the cake is covered with chocolate icing and decorated with green coconut shavings and / or sliced ​​almonds.
