  • 4 eggs
  • 1 avocado

  • Fresh parsley
  • Ghee butter for greasing

Method of preparation:

  1. Preheat oven to 180 degrees. Grease the bottom of the baking tray with ghee.
  2. Grate the zucchini in a spiral, then transfer them to a large bowl.
  3. Cut the cherry tomatoes in half, add them to the bowl. Season with olive oil, salt and pepper, stir.
  4. From the resulting mixture form 4 nests in the prepared tray. Gently tap one egg in the center of each nest.
